Isabel From The Political Palate

who inspired this adaptation of Zabaglione.
1)
In the top of a double boiler (or in a stainless steel bowl that
will fit on the rim of a pot as a double boiler does) place
5 egg yolks and 1/4 cup honey. The bowl or double boiler top
must be stainless steel or enamel or the sauce will discolor. Put enough
water in bottom pan to last 10-15 minutes without touching upper
bowl.

Beat and/or stir constantly with whisk over low-medium heat until sauce
becomes quite thick and sticks to sides of bowl (about 10-15 minutes).

Remove from heat and add a scant 1/2 c. Grand Marnier liqueur,
whisking until sauce is smooth.
4)
Place in refrigerator until sauce is very cold.
5)
Whip 1 c. heavy cream stiff and fold into sauce until mixture is
smooth and even. Fold, do not stir.
6)
Fill a glass serving bowl with 5-6 sliced comice pears. Top with
the sauce.
